Sleep. I love sleep. There are times at work I yearn for sleep.
I sometimes wonder if I will ever get enough. Yet, here I am at 11:03 at night, not in bed, not asleep, but still yearning for it...*sigh*

The Great Carrot Bread Experiment
We have a lot of carrots. I mean a lot. Our garden did really well with most of the things we planted (carrots, sugar peas, beats, Swiss chard, pumpkins, spaghetti squash) and not so well with other things (beans [boo] and cucumbers).
As a result, we have a lot of carrots. Did I already say that? Well, it's true. So Mr. Perfect
asked me to try making zucchini bread with carrots instead of zucchini.
I didn't research to see if this had already been tried. I just went
for it.
We thought this one looked like Delicate Arch in Southern Utah.
Mr. Perfect was happy to grate the carrots (the messiest job in the whole process). He's a trooper.
And it was amazing.
The recipe I use for zucchini bread is really just a vehicle for vanilla and cinnamon. You could probably put almost anything in it for a moist filler and it would work. But the carrot bread was tasty. I like it better than zucchini bread. It really is more of a cake than a bread. We topped it with cream cheese frosting. Moist, moist, moist. Mr. Perfect was in heaven. Carrot is his favorite cake.

I have discovered...
When you are reactionary, you are allowing someone else to control you. It's better to be proactive. To take the initiative. To do what you believe and feel is best. To tell the truth. To be calm and collected.
Of course, you have to do this with filters on. Doing any of this without filters on is social suicide. You'll spend the rest of your live wondering why people don't want to talk to you.

I have discovered...
My mom is amazing.
Seriously, she does some of the most amazing things. Canning (or bottling) is just one of those things. We're splitting a bushel of peaches for bottling and pie-making.
Bottling peaches is not as easy as I remember it being as a child. And it's not as easy as bottling tomatoes. But we will be excited to eat them this year. It's cheaper than buying them at the Costco.
We still have two more batches of peaches to put up because all of the fruit wasn't quite ready yet. It should be by tomorrow or Thursday.

Where where you?
Where were you on September 11, 2001 when you found out about the attacks? I was on the freeway heading to work and listening to the radio. People were pulling over to the shoulder so they could listen to the live report.
How has your life changed personally because of this event? Are you closer to your family? Are you closer to God? Do you feel that we, as a country, have lost some of the good that came out of this awful tragedy? I do. I think that we have become more hardened towards righteuousness. We have become more worldly and less inclined to rely on Heavenly Father. I don't believe these changes are for the better. In so many ways, I wish we could go back to the innocence of how life was before 9/11, but I know we can't. In more ways, I wish we could go back to the raw, real emotions of the few short months and years just after the attacks. We were kinder to our neighbors, less judgmental of each other, and more loving to our families and friends.
We can't change what happened that day. But we must remember what we learned from it, discard the bad and keep the good. Unfortunately, I think we are losing some of the good.

I have discovered...
I could spend days and days and days at Little Lyman Lake. I would just need to head into town occasionally to have a nice hot shower.
